Originating in Iran and parts of southern Europe, spelt is a relative of wheat and is one of the oldest grains. It has an oval-like shape and a charachteristic nutty flavour. This grain can be used whole or ground into flour. It contains gluten, but much less than wheat, and can often be tolerated by those who are sensitive to gluten.
